BBQ Chicken Wontons






Asian BBQ Chicken Wontons
an original recipe by Kelly Jo Vanderstelt


1.  Saute' over medium heat in a skillet:
  • 1 Tbs. Olive Oil
  • 1 Tbs. Butter
  • 1 Red Onion, diced

2.  When onion is transparent, stir in the following, and let simmer for about 10 minutes:
  • 2 Cloves of Garlic, minced
  • 1 Cup of Ketchup
  • 1/4 Cup of Soy Sauce
  • 1/8 Cup of Rice Vinegar
  • 1 Tbs. Brown Sugar
  • 1/2 Tsp. Chili Powder
  • 1/2 Tsp. Dry Mustard
  • 1/2 Tsp. Salt

3.  Remove sauce from heat and let cool for several minutes.  Stir in:
  • 2 Cups Chicken, already cooked and shredded
  • 2 Cups Shredded Cheese (I used mozzarella and cheddar)

4.  Put 1 Wonton Wrapper in each cup of a muffin baking tin.  Place one heaping spoonful of chicken mixture into each wonton.

5.  Bake for about 10 to 12 minutes at 375 degrees, until wonton is nicely browned and crispy.

6.  Top each one with a few additional shreds of cheese.

Makes three-and-a-half dozen.
