Snacking Veggies

Early in the week, take a few quick minutes and slice up a some veggies.

Get off the couch and chop during a commercial break, if you must!  Whatever it takes, just do it.  Whack up a few carrot and celery sticks, or bell peppers, or cucumbers. Or go a little crazy, and try jicama!  It may appear foreboding on the outside, but once it's peeled and chopped, you'll pleasantly enjoy its cucumber/applelike appeal.

Float your fresh veggies in a bowl of water so they'll stay crisp and handy.  Place them in the fridge where your hungry family - on the prowl for food - will notice them right away.  Set out the bowl (with a scoop of peanut butter or ranch dressing for dipping) for your child's after-school snack. Or throw a few in a little bag when you pack school lunches for the next couple of days.  On hectic, bleary-eyed mornings, you'll be glad the work is already done!
