Poor Mother's Seafood Pasta

Feed your troops in twelve minutes flat, for under $4.  And they will like it!

Everything you need for this recipe may already be in your pantry.  If not, pick up the ingredients next time you shop so you'll have them on hand for cooking emergencies.

Ramen Noodles are often considered college food, because they are dirt cheap.  After a decade-long break from them, I've learned to appreciate their price - and also their convenience when I'm in a pinch.  They also taste great covered with a little spaghetti sauce.  And who doesn't enjoy a little curly noodle texture on your tongue?

Scoop up a bowlful of my Poor Mother's Seafood Pasta for all the folks around your table, and serve it with those raw veggies you cut up on earlier this week!


Poor Mother's Seafood Pasta

1.  In a large pot, bring 2 Cups of Water to a boil and add:
  • 3 packages Ramen Noodles (just the pasta, not the seasonings)
  • 1 1/2 Cups Frozen Peas
2.  Boil two to three minutes, stirring occasionally, until noodles are softened. 

3.  Turn heat down to low and stir in:
  • 2 Tbs. Butter (substitute Olive Oil if health conscious)
  • 1 Tbs. Flour
  • 1 1/2 Cups Milk, pouring in slowly as you stir
  • 2 - 5 oz. Cans of Tuna, drained
4.  Season:
  • 1 Packet of Ramen Noodle Seasoning (I used chicken flavor)
  • 1 Tsp. Minced Onion
  • 1 Tsp. Celery Seed
  • 1 Tsp. dry Mustard
  • 1/2 Tsp. Garlic Salt
  • 1/2 Tsp. Chili Powder
5.  Sprinkle 1/2 Cup Shredded Cheese or more over the top (cheddar or colby-jack).  Stir in if desired. 

Makes four generous servings.  Throw in an extra package of noodles, another 1/2 cup each of water and milk, and an extra pinch of everything else to stretch it to six
servings.
