Busy Week Menu


Happy Monday!  Hope your weekend included fun, family time and rest.  We went to a friend's home for a wildly competative Friday game night.  Then we celebrated "Saturday Stay-at-Home-Day," in which we intentionally hung around the house, doing very little, to balance out our crazy week-long running.  That evening, Hubby and Kiddo went to a basketball game while I enjoyed making Spanikopita (pastry stuffed with spinach and feta cheese) and chatting with a girlfriend.  We made Barefoot Contessa's recipe, and I wouldn't change a thing! 

On Sunday after church, I took my Kiddo to the 47th Annual Lollipop Symphony in Duluth, which featured sets of classical music designed to interest children.  We LOVED it!  She has since announced her plan to learn the violin.

Another week is now upon us.  It'll be busy, as we get ready for a spring break vacation.  So I've planned a few quick and easy meals to squeeze in between my part-time job, packing for the trip, cleaning my castle, taking the dog to the vet, parent-teacher conferences, tackling the laundry mountain, leading the kid's class on Wednesday night, and meeting two girlfriends for two coffee dates - all in four days' time.  Whew!

This week's menu is off to the right.  I'll post recipes the following morning for those noted with an asterix.  For today, take ten minutes and slice up a few veggies for snacking, like carrot and celery sticks or bell pepper or cucumbers.  Float them in a bowl of water so they'll stay crisp and handy, and place them in the fridge where your family will see them when they're on the prowl for food.  Scoop a few out of the bowl for your child's after-school snack. Or throw a few in a little bag when you pack their lunch the next couple of days, work already done.
