Aloha Chicken



Getting the week off to a strong start requires a quick and easy supper.  The unique appeal of my simple recipe will make your family say, "Aloha" to chicken.  My kiddo exclaimed, "Mom, I've taken my first bite, and this chicken is tender and juicy - so good!"

1.  Combine in slow cooker:
  • 1 - 20 oz. can of Crushed Pineapple (and its juice)
  • 1 Bell Pepper, any color
  • 1 medium Onion, chopped
  • 1/4 cup Brown Sugar, packed
  • 2 Tbs. Quick-Cooking Tapioca (for thickening)
  • 2 Tbs. Ketchup
  • 1 Tbs. Soy Sauce
  • 1/2 Tsp. dry Mustard
  • 1/2 Tsp. Salt
2.  Stir to mix well.

3.  Add 4 to 6 chicken breasts, depending on their size - and your needs.  You may cut them into large chunks, if you wish.  Dunk them into the sauce to coat, and arrange them in the slow cooker.

4.  Cook on HIGH for 3-5 hours or on LOW for 6-8 hours.  Serve over hot cooked rice.

Tip:  The Aloha sauce will gain volume as the meat juices combine during cooking.  This recipe also works well for pork steaks or country ribs.  You can even try mixing pork cuts with a few chicken breasts.
